  • 100 g ground fenugreek
  • 1 head of garlic, crushed
  • 3 tablespoons of paprika
  • Water and salt

  1. Put the ground fenugreek in a wide bowl and work in warm water a little at a time, aiming for the consistency of thick yoghurt.

  2. Leave it overnight in the fridge. The galactomannan swells in that time and the mixture thickens noticeably — add the spices before it and you will never get the consistency right.

  3. The next day add the garlic, paprika and salt and mix well. It should cling to the spoon without running.

  4. Adjust with warm water if it is too stiff, or another spoon of fenugreek if it is too loose.

  5. Jar it. Another day before use softens the taste noticeably: fresh çemen is sharp and faintly bitter.
