Pilaf

The water goes into the grain and stays there. In the pudding the starch bound the water; here the grain drinks it, and how much it will drink is settled in advance. That measure is the whole of pilaf.

Grain by grain

The band classic Turkish pilaf lives in. Every grain has taken its water, none of them stick, and a spoonful falls apart on the plate.

The timeline

In order, minute by minute

Not a list of steps but a timeline: each one carries the minute it happens at and the temperature it happens at. Changing the order changes the result, and this shape is why the engine can say so.

  1. 0 minutes 40 °C

    Soak the rice in warm salted water, then rinse it until the water runs clear.

    Rinsing takes the loose starch off the surface, and that loose starch is what glues grains together. The warm soak hydrates the grain in advance, so its outside does not race ahead of its middle in the pan.

    What to look for Until the cloudiness goes, which is usually three or four changes of water.

  2. 20 minutes 120 °C

    Melt the butter, add the rice and turn it until every grain is coated.

    The film of fat partly seals the surface and slows the starch leaching out. That is the second half of a separate-grained pilaf; rinsing was the first.

    What to look for The grains go glossy and separate, without taking colour.

  3. 23 minutes 100 °C
    Critical point

    Add the boiling water all at once, stir once, cover and drop to a low heat.

    From here, stirring breaks the grain and puts its starch into the water. The water is now reaching the rice as steam under the lid, evenly, and every peek costs you some of that steam and some of that evenness.

    What to look for Until no water shows on the surface and small steam holes open between the grains.

  4. 35 minutes 80 °C

    Off the heat, a cloth under the lid, and fifteen minutes to settle.

    The moisture is not yet even inside each grain: the outer layer is wet and the middle relatively dry. Resting evens that out, and the cloth stops condensation dripping back down.

    What to look for Lifting the lid should give you steam, not standing water.

Read off the water-to-rice ratio. The age of the rice shifts it too — older rice drinks more, new-crop less.

Salt

The salt goes into the water rather than onto the rice: the grain takes the salt in with the water. Salt scattered afterwards stays on the outside.

Separation

Fat coats the grain and keeps it from sticking. Pilaf without it is perfectly possible and much harder to keep separate.

When it goes wrong

What happened, why, and what to do

Some of these can be saved and some cannot. Writing up the second kind as though it were the first costs somebody another twenty minutes.

01 The grains are firm and raw in the middle
Why

Not enough water, or the lid came off early and the steam went with it.

Can be saved

Add a small glass of boiling water, cover, five more minutes on a low heat. Not cold water: the temperature drops and the cooking stops.

02 The grains stuck together
Why

It was not rinsed, or it was stirred while cooking. The surface starch went into the water and glued the grains.

Can be saved

Partly: fluff it with a fork and rest it another ten minutes. The starch does not come back, but the drying surface separates a little.

03 It turned to porridge
Why

The ratio passed 1.7. The grains burst and their starch went into the water.

Cannot be saved

It cannot be saved, and draining does not help — the starch is no longer in the grain.

04 The base caught
Why

The heat never came down, or the pan is thin. Once the water went, the base passed 100 °C and started toasting the rice.

Cannot be saved

Lift the unburnt rice into another pan without scraping. Persian cooking does this on purpose and calls it tahdig — but there is a fine line between on purpose and by accident.

What could not be checked

The safety check does not know the following. That is not the same as nothing being wrong — it means nobody looked, and anything meant to keep at room temperature has to be measured rather than assumed.
