Bread

Every scenario so far was measured in minutes. Bread is measured in hours, and something in it is alive: the yeast speeds up and slows down with the temperature of your kitchen. That is why the times in a bread recipe are estimates, and the measure is the dough itself.

Between 55 and 75 per cent, the band home bread lives in. It sticks a little and still holds a shape, with a gluten network strong enough to trap gas and elastic enough to expand.

The timeline

In order, minute by minute

Not a list of steps but a timeline: each one carries the minute it happens at and the temperature it happens at. Changing the order changes the result, and this shape is why the engine can say so.

  1. 0 minutes

    Mix the flour and water and leave it twenty minutes. No salt or yeast yet.

    The moment flour is wet its own enzymes start working and gluten begins forming without being kneaded. This wait buys back half the kneading you would otherwise spend. Salt is held back because at this stage it slows that formation.

    What to look for Shaggy and lumpy is correct; it does not need to look tidy.

  2. 20 minutes

    Add the salt and yeast and knead until smooth. Warm water, never hot.

    Yeast is alive and comfortable between 25 and 30 °C; above 40 it struggles and at 55 it dies. Water that feels hot to the hand is usually past 45, so the water heated to "wake the yeast up" is the water that kills it. Salt slows it too, but does not kill it — it is enough not to tip it straight on top.

    What to look for The dough should stretch into a thin window without tearing.

  3. 30 minutes
    Critical point

    Cover and prove until it is close to double. Watch the dough, not the clock.

    This step is the whole time axis of the scenario. The yeast turns sugars into carbon dioxide and alcohol, the gluten network holds the gas, and the dough grows. But the duration is an outcome rather than a cause: a prove that takes four hours at 20 °C finishes in ninety minutes at 28, with the same dough. The hour in the recipe is a guess; the measure is the volume and the poke test.

    What to look for A poked dent should fill back slowly. Instantly means early; not at all means late.

  4. 2,5 hours

    Turn it out gently, fold it into shape and pull the surface tight.

    Shaping builds a taut skin on the outside, and that skin is what makes the loaf open upwards in the oven. A slack skin sends it sideways instead. Knocking the dough about here throws away most of the gas two hours produced.

    What to look for A smooth, tight surface with the seam underneath.

  5. 2,7 hours

    A second prove, until it has grown by about seventy per cent.

    The second is shorter than the first and is deliberately left incomplete. The dough expands once more in the oven, where heat rapidly grows the gas and the steam, and it needs room left for that. A loaf already fully doubled has nothing more to give.

    What to look for The dent should fill back about halfway.

  6. 4 hours 230 °C

    Slash the top and bake in a very hot oven with steam for the first fifteen minutes, then dry.

    Steam delays the crust drying, and a dried crust hardens and stops the dough expanding, so the first minutes need moisture. The slash gives that expansion a door; without one the loaf tears at its own weakest point. Then the steam goes, the surface dries, passes 140 °C, and Maillard and caramelisation colour the crust.

    What to look for An internal temperature of 96–99 °C, and a hollow sound when the base is tapped.

  7. 4 hours 60 °C

    Cool on a rack for at least an hour. Do not cut it hot.

    Bread is still cooking when it leaves the oven: as the starch gel cools it redistributes its water and the crumb sets. Cut it hot and it looks gummy — not because it is underbaked but because it has not finished.

    What to look for The cut face should look moist without sticking to the knife.

Read off water against flour. More water opens the crumb and makes the dough harder to handle: two faces of one dial.

Less yeast means a longer prove and a deeper flavour. More yeast lifts it fast but leaves no time for the acids and esters fermentation produces: quick bread tastes quick.

Salt

Salt is not only taste: it tightens the gluten and regulates fermentation by slowing the yeast. Bread without it is both flat-tasting and uncontrolled.

What is happening in the pot

  1. < 62 °C Starch still asleep The granules are just floating there doing nothing. No body arrives before 62 °C. Held in the system
  2. stronger the more you knead A gluten web is forming Gliadin and glutenin hydrated into an elastic net. This is what will hold the gas. Held in the system
  3. 24–40 °C · hours The yeast is working It is eating sugar and making carbon dioxide plus aroma compounds. Slow work, but this is where depth comes from. Held in the system
  4. ideal 0.8–1.5% Salt · 1.18% Right in the window. Flavours sharpen, bitterness retreats, water is held. Held in the system
When it goes wrong

What happened, why, and what to do

Some of these can be saved and some cannot. Writing up the second kind as though it were the first costs somebody another twenty minutes.

01 It never rose at all
Why

The water was too hot, above 55 °C, or the yeast was old. Once it is dead, time fixes nothing.

Can be saved

Fresh yeast dissolved in a little warm water and kneaded through will usually save it. If it does not, bake the dough flat as bazlama.

02 It collapsed in the oven
Why

Over-proved: the gluten network stretched past its limit and could no longer hold the gas.

Cannot be saved

Caught before baking, it can be reshaped and given a short second prove. A loaf that came out of the oven collapsed cannot be undone.

03 The crumb is gummy
Why

Either the centre never reached 96 °C, or it was cut hot. Both look identical.

Can be saved

If it is underbaked, back into the oven for fifteen or twenty minutes. If it was only cut hot there is nothing wrong; it settles as it cools.

04 A pale, soft crust
Why

The oven was not hot enough, or the steam stayed to the end. The surface never reached 140 °C.

Can be saved

Give it another five or ten minutes at a high heat without steam. The colour comes.

05 Flat-tasting, and the dough proved out of control
Why

The salt was forgotten. Nothing slowed the yeast and the gluten stayed slack.

Can be saved

It can still go in while you are kneading. After the oven, it cannot.

What could not be checked

The safety check does not know the following. That is not the same as nothing being wrong — it means nobody looked, and anything meant to keep at room temperature has to be measured rather than assumed.

How firm is this

This is a model estimate rather than a measurement. How far each threshold behind it has been checked is below; fourteen of the fifteen still have no source on file, and saying so is better than not.
